SYRUP MAKING AT MAPHIS TREE FARM

 

 

Old times are remembered and discussed at the cane mill.

This is a one horse cane mill. Dorcas turns the mill as cane is fed into it.

As cane is fed into the mill, it is squeezed by three rollers and the juice is released onto a strainer over the wash tub.

Juice cooking in the kettle.

The juice is heated and a rolling boil is maintained while the juice is skimmed and cleaned.

Checking to see if the juice has been reduced to syrup.

Juice is dipped into a container where a sugar hydrometer is placed. When the correct reading is reached the juice has been reduced to syrup

Pouring up the syrup.

The syrup is poured through a strainer into a container where it can be jarred.

Jaring the syrup.

Using thick leather gloves, the hot syrup is placed into jars.
